In the quiet, coastal town of Oceanside, California, where the Pacific whispers to the land and the seasons shift gently under sunlit skies, Matsu was born̶an intimate culinary sanctuary that reinterprets Japanese tradition through the lens of Southern California’s natural bounty.

Matsu is not merely a restaurant; it is a reflection of thoughtful evolution. Each detail is an expression of intentionality. Here, the past and present coexist: centuries-old techniques inform the menu, and modern craftsmanship reshape it.

Chef William Eick has drawn inspiration from his deep respect for Japanese culinary heritage, internalizing its spirit. This is Japanese cuisine, yes̶but seen through the terroir of California; articulated with restraint, clarity, and soul.

Matsu does not seek to replicate Japan. Instead, it honors it by crafting something deeply personal, deeply local, and deeply respectful.
